The Myth of "Audit Week"
If your team hears the word "audit" and immediately starts a frantic deep clean, you have a systemic problem. Unannounced audits are designed to catch exactly this behaviour. The goal is perpetual compliance—a state where an auditor could walk in any day and find you meeting standards.
The 3-Tier Hygiene System
We recommend structuring your cleaning program into three layers:
- Shift Cleaning: Done by production staff. Focus on food contact surfaces and immediate spills.
- Nightly Sanitation: Done by contract cleaners (us). Deep cleaning of equipment, floors, drains, and overheads.
- Weekly/Monthly Deep Cleans: Scheduled for areas that accumulate slowly—ducting, cold room coils, high-level structures.
Documentation is Your Defence
An auditor wants to see proof of cleaning, not just clean surfaces. Digital cleaning logs with timestamps, chemical dilution records, and swab test results are your best friends. ProSan Australia provides a digital reporting portal for all our clients.
