Why most "surface cleans" fail HACCP audits

HACCP auditors aren't just looking for visible dirt; they are looking for biofilms and cross-contamination vectors. In Queensland's humid climate, Listeria monocytogenes can colonize drains and cooling units within hours of a standard washdown if improper chemicals are used.

The "Red Zone" Checklist

Before your next audit, verify these often-missed areas:

  • Evaporator Fan Guards: Often hide mould behind the grill.
  • Gasket Grooves: A prime breeding ground for Salmonella.
  • Underside of Conveyors: Visual inspection mirrors are essential here.
  • Drain Baskets: Must be removed and scrubbing inside the trap, not just the grate.

Pro Tip: Swab Testing

Visual clean is not clean. We recommend ATP swab testing specifically on Zone 2 areas (adjacent to food contact surfaces) as these are the most common source of re-contamination.

Chemical Rotation Strategy

Bacteria adapt. If you are using Quaternary Ammonium ("Quats") every single night, you are selecting for resistant strains. implement a weekly shock rotation using Peracetic Acid (PAA) or Chlorine-based sanitisers to break biofilm tolerance.
