Standard 3.2.2A, which became effective for most businesses in December 2023 (and December 2024 for some), introduces three mandatory food safety management tools for businesses processing potentially hazardous food. The Three Mandatory Tools
Under Standard 3.2.2A, your business must implement:
- Food Safety Supervisor (FSS): At least one qualified FSS with formal certification obtained within the past five years. They must be reasonably available when food handling occurs.
- Food Handler Training: All food handlers must possess appropriate skills and knowledge in food safety and hygiene—including cleaning and sanitising practices.
- Demonstration of Food Safety Controls: You must maintain records or otherwise demonstrate to authorised officers that you are safely receiving, storing, processing, displaying, and transporting potentially hazardous food.

Standard 3.2.2 (which Standard 3.2.2A reinforces) mandates that food businesses maintain premises, fixtures, fittings, equipment, and food transport vehicles in a clean and sanitary condition. This includes preventing accumulation of food scraps, dirt, and grease.
