Where to Swab: Strategic Sampling

Random swabbing is ineffective. Focus on:

  • Zone 2 surfaces adjacent to food contact (these are contamination sources)
  • Hard-to-clean areas like gaskets, hinges, and conveyor edges
  • Post-sanitation, pre-production timing
  • Rotating sample sites to cover all areas over time

Common ATP Testing Mistakes

  1. Testing wet surfaces: Residual sanitiser can cause false negatives. Wait until surfaces are dry.
  2. Not establishing baseline: You need historical data to identify trends and deterioration.
  3. Testing only Zone 1: If you only test food contact surfaces, you miss the harbourage sites that cause contamination.
  4. Not acting on results: Testing without corrective action is just paperwork.
