Where to Swab: Strategic Sampling
Random swabbing is ineffective. Focus on:
- Zone 2 surfaces adjacent to food contact (these are contamination sources)
- Hard-to-clean areas like gaskets, hinges, and conveyor edges
- Post-sanitation, pre-production timing
- Rotating sample sites to cover all areas over time
Common ATP Testing Mistakes
- Testing wet surfaces: Residual sanitiser can cause false negatives. Wait until surfaces are dry.
- Not establishing baseline: You need historical data to identify trends and deterioration.
- Testing only Zone 1: If you only test food contact surfaces, you miss the harbourage sites that cause contamination.
- Not acting on results: Testing without corrective action is just paperwork.
